What Are The Ingredients?

* Half cup of freshly chopped cranberries.

* A quarter cup of fresh pomegranate seeds.

* 1 -2 tablespoons of freshly scraped orange zest.

* 1 tablespoon of freshly chopped basil leaves.

* 2 tablespoons of sugar.

* A loaf of French baguette toast, cut into 15 slices diagonally.

* One log of brie cheese, cut into 15 small slices (fits on top of the baguette).

* Ground pepper and salt to taste.

* Olive oil.

Notes:

You can use the frozen cranberries but be sure it is defrosted well.

Refined sugar substitution such as ‘low-carb sweeteners’ Stevia, Sucralose, Xylitol, Erythritol, or Yacon syrup is a great choice. Ensure the measurement is equivalent to two tablespoons of sugar except for Stevia sweetener (Why? Read below).

How To Make It?

1. In a medium-size bowl, mix well pomegranate seeds, chopped cranberries, orange zest, sugar, and salt together.

2. Get the oven heated to 350′ F.

3. Meanwhile, put the baking paper onto the baking tray.

4. Then, brush both sides of the baguette slices with a light coat of olive oil. Sprinkle also both sides of the baguette slices with ground pepper.

5. Bake for about 4 minutes and turn to the other side and continue baking for about 8 -10 minutes.

6. Put the brie cheese slices on top of each baguette slice and bake for another 4 – 5 minutes or until the cheese is softened.

7. Final step is to put the chopped basil leaves into the mixture and then spoon on top of the toasted bruschetta.

Tada …. ready to serve while it’s still warm!
